Seafood Chowder – Crab & Clams
This recipe was shared by a dear friend of my mom’s and it has been a favourite for a long time.
In my version, I’ve omitted the crab (did not have any on hand), however, I added diced potato, corn and some bacon flavour. I also did not have enough evap milk so I also used milk. You could also add 5 or 10% cream. My process was a little different since I used onion, so I will note both ways to make it.
ORIGINAL VERSION
INGREDIENTS:
- 5 cups of 2% evaporated milk
- 1/4 cup of butter
- 5 Tablespoon flour (mix with melted butter, add to milk stir until smooth)
- 3 scallions (diced)
- Mrs Dash (optional)
- 1/2 teaspoon fish sauce (optional)
- Knorr instant seafood stock
- 1 can clams (no juice)
- 1 pack of pollock (mock crab), or real crab, scallops or shrimps
DIRECTIONS:
Heat slowly – do not boil
NICOLE’S VERSION
- 2 cans 2% evaporated milk
- 1 cup milk (2% mixed with 10% cream)
- Approximately 1/2 cup finely diced onion (cooking and sweet onion mixed)
- 5 Tablespoon flour
- 5 Tablespoon butter
- 1 Tablespoon Knorr Chicken flavour (liquid)
- 1/2 teaspoon fish sauce
- 1 1/4 cup corn niblets
- 1 cup baby spinach (optional)
- Approximately 1 cup finely diced potatoes (used 1/2 can potatoes)
- 2 cans baby clams (no juice)
DIRECTIONS:
Melt butter in large pot, saute onions until soft. Add flour and blend. Slowly add your milk and mix well. Do not boil. Simmer on low and keep stirring.
Add 1 Tablespoon of chicken flavour or vegetable broth. Adjust to taste. Do not add salt.
Add spinach for colour.
Add 2 cans of clams, your potatoes and corn.
Add some bacon fat for a bit of bacon flavour .
Stir and let thicken.
