Rotini, Tomato & Black Bean Pasta with Roasted Dressing

Ingredients:

  • extra virgin olive oil
  • sweet Onion  – 1/2 onion
  • scallions – 5 (fresh from garden if you can)
  • thyme sprigs – 4
  • fresh basil – 1 flower & 4 leaves
  • 1 large garlic clove
  • 1/2 cup tomato juice
  • 1/4 cup liptons tomato and noodle soup (dry)
  • 1/8 tsp sea salt
  • 3/4 cup of diced tomatoes (canned or jar)
  • 3/4 cup black beans (canned, rinsed)
  • 1 cup of water
  • 1 tablespoon dijon mustard with horseradish in it
  • 4 cups of al dente cooked pasta
  • Fresh grape/cherry tomatoes to taste

 

Preparation:

In large saucepan, lightly sauté onion, scallions, thyme sprigs, garlic, basil in 1 1 – 2 tablespoon olive oil.

Add your tomatoes, beans, soup mix, salt and simmer.  slowly add water.
Add dijon mustard

Add the pasta (ensure it is cooled)

Let sit overnight to enhance flavour.  Add fresh basil as topping, or parmesan cheese. If needed, add a bit of oil , garlic and vinegar.

Add sliced cherry tomatoes to your pasta prior to serving.  Add salt and pepper to your tomatoes.

To meatavor it, you can add finely julienned ham, or spicy genoa salami

 

Whitby Chamber Luncheon July 18th – Trinity Irish Pub

May the luck of the Irish be with you!

Well it certainly was with me and the guests at my table who attended the Whitby Chamber luncheon event yesterday at the Trinity Irish Pub in Whitby.

Yesterday’s luncheon was VERY  good!  Kudos to chef ‘Tyler’.    As I was enjoying my yummy sheppards pie, I instantly noticed it had a more profound flavor than that of just beef,  something like rich beer or perhaps wine.  I actually even mentioned it while we were eating.  Well my taste buds did not steer me wrong.  Later I spoke with Tyler, and he confirmed that he did indeed add lots of flavourful Guiness beer PLUS some red wine and that it had cooked for a while to a nice ground beef reduction that included the special ingredients.

This was certainly a winner and the ever-so-popular fish and chips did not disappoint.  Many folks went back for seconds on this.  The chips were also awesome.

This luncheon gathering was so popular that Tyler later confirmed he was worried about running out of food.   I think we had more than initially registered.

To add some fun to our event, there were some great prizes AND every single guest walked away with a nice Guiness glass and a red beer opener.  Perfect for their own patio and bevvie of choice.

I know my hubby was happy to add this new Innis and Gun glass to his beer glass collection. My cabinet is just about overflowing.

The usual door prizes were handed out but they also had a mini contest and quiz to test our Irish knowledge.  The winning table would each get a lovely prize pack which consisted of a movie pass, beer paraphernalia and other goodies for Summertime. 

The four of us at my table put our heads together and we filled out the answers as fast as we could thinking it was critical to be submitting this within a certain time period.  I blurted out ‘we won’t win anyhow’, and Tracy Axford (the lucky charm girl) said ‘hey I always win’.  So with that I said we have to turn on our positive energy.   Well, wouldn’t you know it, it worked because  our table won and our young new entrepreneur Montana McElwain was gleaming with joy.  He not only won this contest but he also won a door prize.

heatherAll in all, it was a great luncheon and it’s always good to get out of the asylum (office) for some cheer and positive networking.

Quick Berry and Banana Trifle for 4

Ingredients:

  • 1 package raspberries
  • 1 banana
  • Few fresh squeezes of an orange
  • Limoncello
  • Port Wine
  • 7 strawberry short cake breads

Directions:

  • Bottom layer, break up  pieces of cake (you will want 2 layers in each large cup
  • Add juice  (liqueur etc.) I free pour it but don’t drown the cake! Light sprinkle.
  • Add layer of berries
  • Add layer of Devon custard cream
  • Add layer of cake pieces (optional add more liqueur)
  • Add sliced bananas
  • Add layer of cream
  • Add layer of berries
  • Sprinkle with icing sugar
